Preparation
Prepare the greens: Wash and thoroughly dry the greens. Wet greens will not hold the dressing and will become watery.
Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, and salt with a fork.
Add dressing and serve: Add the dressing to the greens just before serving and mix gently. Do not add it beforehand — the greens will wilt.
