The olive oil production process begins with the careful harvesting of olives at their ideal stage of ripeness.
During harvesting, preventing the olives from being crushed is a critical step in producing high-quality olive oil. The harvested olives are processed through crushing and malaxation to allow the oil droplets to combine; when this process is carried out below 27°C, cold-pressed olive oil is obtained.
Then comes the pressing and resting stage, where the olive paste is separated into oil, water, and pomace using modern centrifuge systems. In the final bottling stage, the olive oil is filtered for clarity and packaged in a way that minimizes contact with oxygen.
